We’re keeping it simple here: this is my go-to fluffy waffle recipe with some twists to incorporate the Earl Grey flavor.
Egg whites. I recommend whipping up the egg whites for a fluffier waffle. But if you’re in a hurry, this recipe is very forgiving: you can skip it and still get a soft inside.
Earl Grey. The Earl Grey tea you’ll add to the batter needs to be extra fine so it won’t affect the texture. I prefer to use the contents of a bag rather than grinding loose leaves: way more practical.
Vanilla Extract. You can use vanilla extract for a vanilla-flavored Earl Grey waffle, lavender extract for a touch of lavender, or use Earl Grey extract for a full Earl Grey experience. You can also opt to leave it out completely.
🥣How to make it
Step 1. In a microwave-safe bowl, heat the milk for 1 minute. Add Earl Grey and let it steep, removing bag or loose leaves after 5 minutes.
Step 2. Separate the egg. Beat the egg white until medium peaks.
Step 3. In a medium bowl, mix the egg yolk, sugar, melted butter, Earl Grey milk, and finely ground Earl Grey tea leaves.
Step 4. Add all-purpose flour and baking powder, stirring until incorporated. Don’t overmix; a few lumps are fine.
Step 5. Add the egg whites, stirring gently until mixed into the batter.
Step 6. Using a preheated and greased waffle iron, drop the batter until most of the wells are covered.
Step 7. Close the lid and cook for about 2-3 minutes, or until golden brown.

✔️Expert Tips
Try not to skip beating the egg whites. Beating them makes for a fluffier waffle interior by adding more air to the batter.
For the batter, use bagged tea rather than loose. Using loose leaves will give you an unpleasant texture.
For an extra crispy exterior, I like to grease the waffle iron with melted butter before each disk.
Keep the waffles warm while making them. Preheat the oven to 225°F with a baking pan inside. Place cooked waffles on the baking pan.

Waffles will stay crispy for a short period of time. To prolong that: do not stack the disks, don’t undercook them, and if not serving right away, let them rest on a cooling rack rather than a plate.
These waffles are fantastic with raspberries and strawberries. It also pairs great with citrus like oranges and passionfruit.
You can substitute the Earl Grey in this recipe for any black tea and get a delicious black tea waffle. Just remember to add ground tea and not loose tea leaves in the batter.
