    Tuna Blender Pie is flavorful, moist, and a total lifesaver on busy days. The best part? The batter comes together in less than 5 minutes—just toss everything into a blender, and voilà!

    Have you ever heard of blender pies? They may not be fancy, but they’re the kind of comfort food you’re thrilled to find in the back of your freezer. In Brazil, there are endless variations—some with chicken, some with tuna, and some completely vegetarian.

    A Different Kind of Pie

    This isn’t your typical pie—there’s no crust at all! Instead, the batter makes it more similar to a rich and savory tuna bread. Made with over half a cup of oil and a generous handful of Parmesan, you can use olive oil instead, but I would not substitute the latter. Parmesan gives an umami boost that takes the flavor up a notch!

    Once you’ve blended the perfect batter, you can get creative with fillings. Personally, I stick to my favorite combo: sweet corn, tuna, cherry tomatoes and onions. Simple but absolutely delicious!

    Expert Tips for the Best Tuna Pie

    • Spreading the filling on top lets the onions and tomatoes caramelize beautifully, making them even more flavorful.
    • Don’t pour more than 1 ½ inches of batter into the pan. Otherwise, it’ll take longer to bake, and the onions and tomatoes might dry out.

    This recipe fills a standard rectangular sheet pan or two smaller round pans.

    Storage

    This pie freezes well for up to two months and stays fresh in the fridge for 5 to 6 days. Perfect for meal prep—or those nights when you just can’t cook!

    Equipment

    • 1 Baking Pan 9" x 13"
    • Parchment paper

    Ingredients
      

    Batter:

    • 3 large eggs
    • ⅔ cup canola oil or olive oil
    • 1 ½ cup milk
    • ½ cup parmesan cheese grated
    • 1 tablespoon baking powder
    • 2 cups all purpose flour
    • ¼ teaspoon salt
    • 1 teaspoon dry oregano
    • ¼ teaspoon black pepper

    Filling:

    • 2 cans tuna drained and flaked
    • 1 cup cherry tomatoes cut in halves
    • 1 medium red onion cut into half-moon slices
    • ½ cup green peas frozen or fresh
    • 1 cup sweet corn frozen or fresh
    • 2 tablespoon apple vinegar

    Instructions
     

    • Preheat the oven to 350°F (180°C).
    • Cut the tomatoes in half and slice the onions into thin half-moons. Drain the canned tuna and place it in a medium bowl. Add the green peas, sweet corn, apple cider vinegar, and a pinch of salt, then mix well.
    • In a blender, combine the eggs, canola oil, milk, grated Parmesan cheese, baking powder, all-purpose flour, salt, oregano, and black pepper. Blend for about 1 minute, or until the batter is completely smooth with no lumps.
    • Grease a baking sheet with oil and pour in the batter. Spread the tuna mixture evenly over the top, followed by the sliced tomatoes. Finally, arrange the onions on top.
    • Bake for 35 minutes, or until a toothpick inserted in the center comes out clean. Let it cool slightly before serving.

    Make It Your Own

    • This recipe is super versatile! Swap out the tuna for shredded chicken, cooked ground beef, or even sautéed mushrooms for a vegetarian version.
    • Try adding chopped olives or capers for an extra briny kick.

      This pie was indeed very easy to do, basically foolproof. I still have to better understand my oven, but the result was great nevertheless.

      My friend doesn't eat fish so I swap the tuna for diced pieces of smoked ham and it worked really well!
