- 3 tablespoons unsalted butter melted
- 4 large eggs
- 1 teaspoon vanilla extract
- 3 tablespoon erythritol or monk fruit sweetener
- 3 tablespoon heavy cream
- ¼ cup coconut flour
- ¼ teaspoon salt
- 1 teaspoon baking powder
Preheat your waffle iron.
In a large bowl, mix eggs, butter, vanilla extract, erythritol (or monk fruit sweetener) and heavy cream, whisking for 2 minutes, until all ingredients are combined.
Add coconut flour, baking powder and salt and stir well, until all the ingredients are combined and there are no dry spots left. Let it rest for 5 minutes.
Pour ⅓ of the batter into preheated waffle iron and cook for 3 to 4 minutes, or according to your waffle iron's instructions. Do not open you waffle iron before your waffle is ready!
Coconut waffles are done when golden and slightly crispy, and there's no more steam coming out the sides of the waffle maker.
Serve warm with your favorite toppings.
Storing: stored leftovers inside the fridge, in an airtight container. They keep from 3 to 4 days.
Freezing: let them cool completely, then store waffles in a freezer-safe bag or container. Seal the bag/close the container's lid well before freezing to prevent the formation of ice crystals.
Making pancakes: this recipe also works for pancakes! Use a nonstick pan, and grease it with butter, coconut oil or cooking spray. Preheat pan before starting, and cook using medium-high heat, 1 minute and a half each side.
Tips:
- ALWAYS PREHEAT your waffle iron.
- If batter is crumbly, add 1 tablespoon of heavy cream and stir.
- Always grease your waffle iron to prevent waffle from sticking. Do it even if using a non-stick waffle maker. I grease with butter, but coconut oil and cooking spray can also be used.
- This batter SHOULD NOT be prepared in advance.
- If you want to keep these waffles crispy, place waffle disks into preheated (350°F) oven. Use middle shelf for that.
