Coconut Flour Waffles (Keto Waffles)

These keto coconut flour waffles take 5 minutes to make plus 5 minutes to cook! Gluten and sugar-free, this breakfast staple is easy to make and perfect for busy mornings.

Ingredients

  • 3 tablespoons unsalted butter melted
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 3 tablespoon erythritol or monk fruit sweetener
  • 3 tablespoon heavy cream
  • ¼ cup coconut flour
  • ¼ teaspoon salt
  • 1 teaspoon baking powder

Instructions

  • Preheat your waffle iron.
  • In a large bowl, mix eggs, butter, vanilla extract, erythritol (or monk fruit sweetener) and heavy cream, whisking for 2 minutes, until all ingredients are combined.
  • Add coconut flour, baking powder and salt and stir well, until all the ingredients are combined and there are no dry spots left. Let it rest for 5 minutes.
  • Pour ⅓ of the batter into preheated waffle iron and cook for 3 to 4 minutes, or according to your waffle iron's instructions. Do not open you waffle iron before your waffle is ready!
  • Coconut waffles are done when golden and slightly crispy, and there's no more steam coming out the sides of the waffle maker.
  • Serve warm with your favorite toppings.

Notes

Storing: stored leftovers inside the fridge, in an airtight container. They keep from 3 to 4 days.
Freezing: let them cool completely, then store waffles in a freezer-safe bag or container. Seal the bag/close the container's lid well before freezing to prevent the formation of ice crystals.
Making pancakes: this recipe also works for pancakes! Use a nonstick pan, and grease it with butter, coconut oil or cooking spray. Preheat pan before starting, and cook using medium-high heat, 1 minute and a half each side.
Tips:
  • ALWAYS PREHEAT your waffle iron.
  • If batter is crumbly, add 1 tablespoon of heavy cream and stir.
  • Always grease your waffle iron to prevent waffle from sticking. Do it even if using a non-stick waffle maker. I grease with butter, but coconut oil and cooking spray can also be used.
  • This batter SHOULD NOT be prepared in advance.
  • If you want to keep these waffles crispy, place waffle disks into preheated (350°F) oven. Use middle shelf for that.
