Earl Grey Waffles

Soft on the inside and perfectly crispy on the outside, Earl Grey Waffles are a delicious twist on homemade waffles made in less than 15 minutes.

Ingredients

  • ¾ cup milk warm
  • 1 bag Earl Grey tea or 1 teaspoon Earl Grey loose tea leaves
  • 1 large egg separated
  • 3 tablespoon sugar
  • ¼ cup butter melted
  • ½ bag Earl Grey tea
  • 1 teaspoon vanilla extract
  • ¼ teaspoon sea salt
  • 1 cup all-purpose flour
  • ½ tablespoon baking powder

Instructions

  • Preheat the waffle iron.
  • In a microwave-safe bowl, heat the milk for 1 minute. Add Earl Grey and let it steep for about 5 minutes, removing the Earl Grey bag or loose leaves.
  • Separate the egg. Beat the egg white until medium peaks.
  • In a medium bowl, mix the egg yolk, sugar, melted butter, Earl Grey milk, salt, and finely ground Earl Grey tea (from the tea bag).
  • Add all-purpose flour and baking powder, stirring until incorporated. Don’t overmix, a few lumps are fine.
  • Add the whipped egg white, stirring gently until mixed into the batter.
  • Using a preheated and greased waffle iron, drop ¼ of the batter, or until most of the wells are covered.
  • Close the lid and cook for about 2-3 minutes, or until golden brown.

Notes

You can easily double or tripple this recipe.
You can substitute the Earl Grey in this recipe for any black tea and get a delicious black tea waffle.
You can use vanilla extract for a vanilla-flavored Earl Grey waffle, or Earl Grey extract for a full Earl Grey experience. You can also opt to leave it out completely.
The Earl Grey you’ll add to the batter needs to be extra fine so it won’t affect the texture. I prefer to use the contents of a bag rather than grinding loose leaves.
Try not to skip beating the egg white. Beating them makes for a fluffier waffle interior by adding more air to the batter.
For the batter, use bagged tea rather than loose leaf. Using loose leaves will give you an unpleasant texture.
For an extra crispy exterior, I like to grease the waffle iron with melted butter before each disk.
Keep the waffles warm while making them. Preheat the oven to 225°F with a baking pan inside. Place cooked waffles on the baking pan.
