    Easy Sourdough French Toast

    Sourdough French Toast is an easy recipe for you to use leftover sourdough! Extra fluffy and soft, this recipe uses a secret ingredient to make delicious, no-fail French toast.

    If you’re asking what to do with stale sourdough, the answer is: french toast!

    🍞Best Sourdough bread for French toast

    This recipe can be made with regular basic artisan sourdough, but my favorite option for French toast is definitely sourdough brioche. The result you'll get using sourdough brioche is a fluffy, light and extra flavorful French toast.

    Another great two option for this recipe are a sandwich milk bread made with sourdough, and my favorite buttermilk sourdough bread.

    📃Ingredients

    Recipes with simple ingredients are the best! For this french toast, we’ll need basic ingredients only.

    Sourdough Bread. If you have a 3-day-old sourdough, you have the perfect bread for this. Be sure to check for any mold before using it if your bread is older than 4 days.

    Eggs. Use fresh, large or extra large eggs for the best result.

    Milk and heavy cream. I use whole milk and full fat heavy cream, but skim or partially skimmed milk work for the recipe, as any cream between 30% and 36% fat.

    Spices. I use cinnamon for this recipe, but during fall, I love adding pumpkin spice when making these.

    Sugar. I add one tablespoon of sugar to the batter. If you’re making a savory french toast, you can skip this ingredient. You can substitute sugar with a sweetener of your choice.

    Salt. A pinch of salt helps to enhance the flavor.

    Butter. I use butter (salter or unsalted) to cook these French toasts.

    All-purpose flour. It’s what makes this recipe fluffy. Don’t skip it!

    🥄How to make it

    Step 01. In a medium bowl, whisk together the eggs, milk, heavy cream, all-purpose flour and spices.

    Step 02. Soak the bread in the batter. Leave the bread slices in the batter so it can soak up the egg mixture. Turn the slices over to soak the other side.

    Step 03. Cook soaked bread slices with butter until each side is golden brown. Do this in batches to make it easier. To keep them warm, you can use a preheated oven on low temperature.

    ✔️Expert Tips

    • You need to slice the bread right. Not too thin, but not too thick. 1-inch thick is a good size.
    • Don't be afraid to soak the bread. Leave the slices soaking into the batter for at least 3 minutes on each side. You want your sourdough bread fluffy and fully soaked for this recipe.
    • Mix the batter well. Or you’ll get pieces of egg white through your french toast.
    • Always use butter! It gives your french toast the marvelous golden brown color. You can choose salted or unsalted here.
    • If you’re having problems with burning your butter, you can add ⅔ butter to ⅓ oil to prevent it from happening.
    • Preheat your skillet over medium-low heat before you start cooking your french toast.
    • Don’t cook them over high heat, or you’ll risk burning your toast without fully cooking it.
    • To get a french toast that’s not soggy, you need to fully cook it. Cook your sourdough using medium-low heat, in a preheated iron skillet or frying pan, for at least 3 minutes each side.

    Storing and freezing

    After cooled, store your sourdough french toast in an airtight container inside your fridge. They'll be good for 1 to 2 days.

    One of the best things about this recipe is that you can freeze it, and it still tastes amazing when reheated. To freeze, wait for your french toasts to cool completely, then place them in a freezer bag. Use parchment paper between each slice if you want so they won’t stick together. I don’t use it, they do stick a bit but are not hard to separate after. They’re good for up to 3 months.

    Reheat them using your oven, microwave, or toaster. If using the oven, bake for about 10 minutes on medium heat.

    I love having these with butter, berries and my apple chamomile honey. French toast is also delicious with custards and whipped cream - using Earl Grey whipped cream makes a delicious and fancy breakfast.

    Ingredients
      

    • ⅔ cup milk
    • ⅓ cup heavy cream
    • 3 eggs large
    • 1 tablespoon sugar
    • ½ teaspoon cinnamon or pumpkin pie spice
    • pinch salt
    • 3 tablespoon flour
    • 8 sourdough bread slices
    • Butter for cooking

    Instructions
     

    • In a medium bowl, mix milk, heavy cream, eggs, sugar, cinnamon (or pumpkin pie spice) and salt, and mix until well combined.
    • Add flour and mix until smooth.
    • Place the batter in a shallow baking dish. Soak the sourdough bread slices for 5 minutes. Turn slices over and soak for another 5 minutes.
    • Heat a cast iron skillet or frying pan over medium heat. Once hot, melt about 1 teaspoon of butter and cook your french toast until golden brown, 3 to 4 minutes. Flip bread slices over and cook for 3 to 4 minutes more, until golden brown. Careful not to burn: if the bread is getting too dark, lower the heat.
    • Serve them warm, with the toppings of your choice.
