    Coconut Flour Waffles (Keto Waffles)

    These keto coconut flour waffles take 5 minutes to make plus 5 minutes to cook! Gluten and sugar-free, this breakfast staple is easy to make and perfect for busy mornings.

    This recipe makes about 3 waffle disks, and it might sound too little but that's enough for 3 people. I can’t have more than 1 disk at breakfast!

    Looking for the best basic waffle recipe? I have one that will give you a light and crispy waffle every time! Pandan waffles is another favorite of mine: it has coconut milk and cream in the batter and can be ready in 15 minutes!

    🛒Ingredients and Substitutions

    Butter. Use melted. Can be substituted for coconut oil.

    Eggs. Use organic, large eggs.

    Vanilla Extract. This ingredient enhance the flavors of the waffle. Can be substituted for coconut extract if aiming for coconut taste.

    Sweetener. You can use erythritol or monk sugar sweetener for a keto version. You can also use coconut sugar if it fits into your diet.

    Heavy Cream. Use heavy cream or whipping cream.

    Salt. Always add salt: the ingredient brings out all the flavors of recipes.

    Baking Powder. Responsible for making your waffles light and fluffy. Always check if your baking powder isn't pass expiration date.

    Coconut Flour. Do not substitute for any other flour. Coconut flour is very different from any flour, and this recipe doesn't have a substitute for this ingredient.

    🧇 How to Make Them

    Preheat your waffle iron. Always preheat it before using. A cold waffle iron will affect negatively the outcome of all waffle recipes.

    Make the batter. Mix all ingredients, following the recipe card instructions.

    Let batter rest for 5 minutes. You need that time to allow the coconut flour to absorb enough liquid. If you don't let the batter rest for 5 minutes, the recipe won't work.

    Cook your waffles. They're ready after about 3 to 5 minutes. Do not open the waffle iron before time. After 3 minutes, they’ll be crispy and golden on top.

    Place waffles into a cooling rack. Don't stack your waffles! That makes them soggy and soft.

    Serve waffles warm, topped with with your favorite jam - I love blackberry jam! - or even a berry compote for a fantastic breakfast.

    🍳 Cooking

    • Always read and follow your waffles iron's instructions. Things like the brand of your waffle iron and size of the waffle you're making can make time vary between 3 to 5 minutes.
    • Coconut waffles are done when there's no more steam coming out the sides of the waffle maker.
    • They'll also be golden brown and slightly crispy.
    • This recipe also works for pancakes! Use a nonstick pan, and grease it with butter, coconut oil or cooking spray. Preheat pan before starting, and cook using medium-high heat, 1 minute and a half each side.

    💭Tips for success

    • PREHEAT your waffle iron.
    • If your batter is too crumbly, add 1 tablespoon more of heavy cream and stir.
    • Always grease your waffle iron to prevent waffle from sticking. Do it even if using a non-stick waffle maker. I grease with butter, but coconut oil and cooking spray can also be used.
    • This batter SHOULD NOT be prepared in advance. It needs to be used as soon as batter set! The more it sits, the more the coconut flour absorbs the liquids in it.
    • If you want to keep these waffles crispy, place waffle disks into preheated (350°F) oven. Use middle shelf for that.

    ❕Storing and Freezing

    These waffles keep better if stored inside the fridge. Use an airtight container for that. They keep from 3 to 4 days.

    You can freeze them and have always a quick snack in hand! It’s great to always have a tasty breakfast only minutes away, right?

    For freezing, let them cool completely, then store waffles in a freezer-safe bag or container. Seal the bag/close the container's lid well before freezing to prevent the formation of ice crystals.

    A tip for preventing them from sticking onto each other is to separate each one with layers of parchment paper.

    To preheat, use a toaster or oven for a crispier result, or just reheat your coconut flour waffles in the microwave for 45 seconds.

    Ingredients
      

    • 3 tablespoons unsalted butter melted
    • 4 large eggs
    • 1 teaspoon vanilla extract
    • 3 tablespoon erythritol or monk fruit sweetener
    • 3 tablespoon heavy cream
    • ¼ cup coconut flour
    • ¼ teaspoon salt
    • 1 teaspoon baking powder

    Instructions
     

    • Preheat your waffle iron.
    • In a large bowl, mix eggs, butter, vanilla extract, erythritol (or monk fruit sweetener) and heavy cream, whisking for 2 minutes, until all ingredients are combined.
    • Add coconut flour, baking powder and salt and stir well, until all the ingredients are combined and there are no dry spots left. Let it rest for 5 minutes.
    • Pour ⅓ of the batter into preheated waffle iron and cook for 3 to 4 minutes, or according to your waffle iron's instructions. Do not open you waffle iron before your waffle is ready!
    • Coconut waffles are done when golden and slightly crispy, and there's no more steam coming out the sides of the waffle maker.
    • Serve warm with your favorite toppings.

    Notes

    Storing: stored leftovers inside the fridge, in an airtight container. They keep from 3 to 4 days.
